Homemade Green Harissa Paste Recipe

This version of harissa is very trendy in Tunisian cuisine. And the conventional red chili peppers are replaced with hot or mild green peppers and a variety of green herbs.

Ingredients

  • Spices
  • 1 tbsp 1 Coriander seeds

  • 1 tbsp 1 Cumin seeds

  • 3 3 Jalapenos  (seeds removed and sliced)

  • 2 Cloves 2 Garlic

  • Herbs
  • 3 tbsp 3 Freshly chopped coriander leaves (cilantro)

  • 2 tbsp 2 Freshly chopped flat-leaf parsley

  • 2 tbsp 2 Freshly chopped mint

  • Other Ingredients
  • 3/4 tbsp 3/4 Salt

  • 1 tbsp 1 Olive oil (plus more to preserve the paste)

Directions

  • Set the spice mixture before you start making the paste.
  • In a small skillet, dry-toast the cumin and coriander seeds until they turn aromatic. Watch out not to toast them too much, or else they’ll burn.
  • Transfer the toasted spices from the skillet to a spice grinder or a mortar and pestle.
  • Grind the two spices to a fine powder and set them aside.
  • To prepare your green harissa:
  • Put all the chopped herbs, sliced jalapenos, and smashed garlic in a food processor or a blender. 
  • Then, add salt, ground spices, and olive oil and blend this until it turns into a smooth paste.
  • Do a taste check and the consistency of the mixture, and add more salt and olive oil as required.
  • Your green harissa paste is ready to be enjoyed!

  • If stored in an air-tight glass jar, topped with some extra olive oil, you can keep this well in the refrigerator for up to two weeks.
  • If you need to keep it for an extended period, pour the paste in an ice cube tray (a silicone ice cube tray is recommended) and top them with olive oil. When frozen, remove from the ice cube tray, and zip in a freezer bag. You can use your homemade green harissa this way for up to one month.
  • Although we have used only three herbs in our green harissa paste recipe, feel free to use the greens of your choice. You can even go with basil and spinach if you like!
  • If you like a little more peppery punch, add about a 1/4 teaspoon of ground black pepper.
  • As mentioned before, you literally can go with any type of mild to hot green chili. Options are: – Green bell pepper (for a less spicy version), Anaheim pepper, Cubanelle pepper, Serrano pepper, Habanero pepper, Green chilies.
