Ingredients

  • Spices & Herbs
  • 2 tbsp 2 Paprika

  • 1 tsp 1 Cayenne pepper

  • 1 tsp 1 Chili powder

  • 1 tsp 1 Ground Allspice

  • 2 tsp 2 Ground White pepper

  • 1 tsp 1 Minced Ginger

  • 2 tsp 2 Minced Garlic

  • 1 tbsp 1 Sage (freshly chopped)

  • 1 1/2 tbsp 1 1/2 Rosemary (freshly chopped)

  • 1 1/2 tbsp 1 1/2 Thyme (freshly chopped)

  • 3 tbsp 3 Flat-leaf Parsley (freshly chopped)

  • Other Ingredients
  • 1 1 Turkey (12-17 lb)

  • 1 1/2 cups 1 1/2 Plain Butter (softened)

  • 3-4 tbsp 3-4 Salt

  • Olive oil

  • To Stuff The Turkey
  • 3 3 Large stalks of Celery (cut into 1-inch pieces)

  • 3 3 Large Onions (cut into wedges)

  • 2 2 Large Carrots ( cut into 1-inch pieces)

  • 1 1 Herb bouquet (combine a few sprigs of fresh sage, thyme, rosemary, and bay leaves)

  • 6 cloves 6 Garlic (peeled)

  • 4 pieces 4 Ginger (large pieces, peeled)

  • 1 Roasting Tray
  • 1 Basting Brush

Directions

  • Brining The Turkey
  • Before roasting the turkey, you must brine it and leave it for 1-2 days for the perfect flavor and texture.
  • You may wash the bird, pat dry it with paper towels and then use a pair of kitchen scissors to trim any excess fat and skin that needs to be discarded.
  • Then use the salt to rub it all over the bird. You need to focus on the cavities of the turkey and make sure salt rubbing reaches almost every part of the bird.
  • After rubbing with salt, place the turkey on a tray and put it in the refrigerator, leaving it to brine for 1-2 days.
  • You may flip the bird halfway through refrigeration to ensure an evenly dried-out skin.

  • Making The Spicy Butter Rub
  • In a bowl, combine softened butter, paprika, cayenne pepper, chili powder, allspice, white pepper, ginger, garlic, sage, rosemary, thyme, and parsley.
  • Whisk the spices and herbs with butter and rub the turkey with a fine smooth paste.

  • Rubbing The Turkey
  • After 1-2 days of brining the turkey, remove it from the refrigerator and pat it dry with paper towels once it comes to room temperature.
  • Rub the butter-spice rub all over the turkey generously, sliding your fingers into its skin. Apply the rub very well on the cavities of the bird, making sure all the corners and edges of the turkey are coated with the rub.
  • Place your rubbed turkey back in the refrigerator and leave it there for at least 24 more hours before roasting.

  • Roasting The Turkey
  • Preheat your oven to 400 Fahrenheit.
  • Take out the bird about one hour before roasting. Brush some oil all over the turkey. You also may use any leftover butter rub if available.
  • Stuff the turkey with the bouquet of herbs, carrots, celery, garlic, ginger and onions.
  • Place the turkey on the roasting pan, breast side upwards. You may tie the legs of the turkey with a kitchen twine to hold its shape.
  • Place the rack in the lowest part of the oven. Roast the turkey for 30 minutes at 400 Fahrenheit, then reduce the heat to 325 Fahrenheit.
  • Continue to roast for about 2 hours and 30 minutes or more depending on the size of your turkey.
  • Check the doneness of the turkey by piecing a sharp knife between the flesh of the leg and the body. If the juices run clear, your turkey is cooked.
  • Let the turkey rest in the oven for at least 20 minutes after cooking. You may carve it after 20-30 minutes.
