Ingredients

  • Spices & Herbs
  • 2 cloves 2 Garlic (minced)

  • 1 1 Jalapeno (seeds and membranes removed, finely chopped)

  • 3 tbsp 3 Chili powder

  • 2 tsp 2 Cumin (ground)

  • 1 tsp 1 Coriander (ground)

  • 1 tsp 1 Oregano (dried)

  • 1 tsp 1 Black pepper (ground)

  • 1 tsp 1 Smoked paprika

  • 1 tsp 1 Cayenne pepper powder

  • 2 2 Bay leaves

  • Other Ingredients
  • 12 oz 12 Ground Beef

  • 2 cups 2 Beef broth

  • 1 can 1 Red kidney beans

  • 1 can 1 Black beans (rinsed and drained)

  • 2 cans 2 Diced Tomatoes (undrained)

  • 1 can 1 Tomato sauce

  • 1 1 Large Onion (chopped)

  • 1 1 Green bell pepper (diced)

  • 1 tbsp 1 Olive oil

  • 1 tsp 1 Sugar

  • 1 tsp 1 Kosher salt (to taste)

  • For Serving
  • Sour cream

  • Fried onion

  • Sharp cheddar or Monterey Jack cheese (grated)

  • Cornbread

Directions

  • First, heat oil in a Dutch oven (medium heat).
  • Add the ground beef once the oil is heated, and cook until brown, breaking the lumps with the spoon. This will take about 5 minutes.
  • Next, add the garlic, saute for a few seconds, and add the chopped onions.
  • Let the onions saute for a few more seconds and follow up with the chopped bell pepper and jalapeno.
  • Mix everything and add the chili powder, ground cumin, ground coriander, dried oregano, smoked paprika, black pepper, cayenne pepper, salt, sugar, and bay leaves. Cook, stirring for about one minute.
  • Add the diced tomatoes, tomato sauce, red kidney beans, black beans and stir them in.
  • Combine everything, simmer it to a boil, and add the beef broth.
  • Bring your chili to a boil again, lower the heat, cover, and let it cook generously for about 30 more minutes. Make sure to stir occasionally until the flavors combine.
  • After 30 minutes, open the lid and do your taste check. You can adjust the seasonings at this stage.
  • Next, transfer the chili to serving bowls, and top with fried onions, a dollop of sour cream, and as much grated cheese as you like. Serve warm with cornbread.

  • We simmered our chili for only 30 minutes. But, if you have time, let your chili simmer over low heat for about 45 minutes. This will allow the flavors to meld perfectly making the dish more flavorful.
  • Adjust the amounts accordingly, if you don’t like the robust flavor of ground cumin and coriander.
  • Use regular paprika instead of smoked paprika if that is what you have.
