Ingredients

  • Spices & Herbs
  • 1 tsp 1 Fresh Garlic (minced)

  • 1 tsp 1 Fresh Ginger (minced)

  • ½ tsp ½ Ground White pepper

  • ½ tsp ½ Ground Black pepper

  • Other Ingredients
  • 2 cups 2 Chicken stock (homemade preferred)

  • 3 oz 3 Chicken breast (boneless chicken, cut into pieces)

  • 1 1 Egg (kept at room temperature)

  • 1/4 cup 1/4 Sweet corn kernels

  • 1 1/2 tsp 1 1/2 Cornstarch

  • 1 1 Roma tomato (finely chopped)

  • 2 tbsp 2 Shallots (finely chopped)

  • 1/4 cup 1/4 Spring onions (leafy part, chopped)

  • 1 tbsp 1 Olive oil

  • 1 cup 1 Water

  • ½ tsp ½ Salt (plus more to taste)

Directions

  • Preparing Shredded Chicken
  • Put the cleaned chicken pieces into a pan with half a teaspoon of black pepper, half a teaspoon of salt, and one cup of water.
  • Mix well and keep this over a medium-high flame and cook the chicken until done.
  • Once the chicken is cooked, remove it from the stove, let it cool down for 05 minutes, and shred the pieces using a fork.
  • Transfer the shredded chicken to a separate bowl and set it aside until needed.

  • Other Preparations
  • Meanwhile, when the chicken is cooking, put a tablespoon of normal water into the cornstarch and mix it well to combine and make a liquid, milky mixture. Set the cornstarch mixture aside until you need it.
  • Then, crack the egg into a small bowl and whisk it gently with a fork. Leave the whisked egg aside until required.

  • Making The Soup
  • Keep the stockpot over medium flame and add olive oil (1 tbsp).
  • Add the minced ginger and garlic once the oil is heated. Let them saute until aromatic.
  • Next, add the chopped shallots and let them saute with ginger and garlic until the shallots turn translucent and fragrant.
  • After cooking them for a few minutes, add the chopped tomatoes. Let the tomatoes saute with other ingredients in the pot for 1-2 minutes. Mash any large tomato pieces using the backside of the ladle.
  • Once the juices from the tomato start to come out, add the two cups of chicken stock. Mix well and increase the heat to medium-high.
  • Stir in the shredded chicken and sweet corn kernels and bring the liquid to a boil.
  • When your soup starts boiling, give another good mix to the cornstarch mixture and add it to the soup.
  • Simmer for a few more minutes and slowly drizzle in the beaten egg while swirling the soup using the ladle. Do not add the egg at once or you will not get the beautiful lacy design in your soup.
  • Reduce the heat to medium-low and keep ladling the soup for another minute.
  • Add half a teaspoon of ground white pepper and the chopped spring onions after switching off the flame.
  • Add salt and other seasonings as needed after a taste check.
  • Scoop the soup into the serving bowls and serve warm!

  • Adding cornstarch can bring a lovely thickness to your soup. But, you can skip this ingredient or use more or less depending on your preference.
  • Using boneless chicken thighs is a good alternative if you don’t like using chicken breasts.
