Ingredients

  • Spices
  • 10 10 Dried chiles (any type of mild chile)

  • 3 3 Fresh chiles (any type of mild chile)

  • 10 10 Large cloves Garlic (peeled and roughly chopped)

  • 1 piece 1 Ginger (use about a 2-inch piece, peeled and chopped)

  • 4 tsp 4 Coriander seeds

  • 4 tsp 4 Cumin seeds

  • 1 1/2 tsp 1 1/2 Mustard seeds

  • 8 8 Cloves

  • 2 tsp 2 Black peppercorns

  • 1 piece 1 Cinnamon (use about 1-inch piece)

  • 7 pods 7 Green cardamom

  • 1/2 tsp 1/2 Turmeric (ground)

  • 1 tbsp 1 Tamarind paste

  • Other Ingredients
  • 2 tbsp 2 Coconut oil

  • 2 tsp 2 Palm sugar (Grated)

  • 1 tsp 1 Salt

  • 1 1/2 tbsp 1 1/2 Vinegar

  • Boiled water to soak the chiles

  • 1 1 Food processor/ Blender

  • 1 1 Saucepan

  • 1 1 Mason jar

Directions

  • Preparation
  • Cut open the dried chiles and remove their seeds and membranes as desired.
  • Put the slitted chiles in a bowl and pour freshly boiled water until they are covered.
  • Let the dried chiles soak in hot water for about 8 minutes.
  • In the meantime, heat the saucepan over medium-low heat and add the whole spices (coriander seeds, cumin seeds, black peppercorns, mustard seeds, cinnamon, green cardamom, and cloves) to the pan.
  • Dry roast these spices until aromatic for about 2-3 minutes. Do not let the ingredients burn.
  • Remove from the pan and transfer the spices to a plate. Let everything cool down for a minute.
  • Put the dry roasted spices into the jar of your spice grinder and blitz until you get a fine powder. Set it aside.
  • After about 8 minutes, drain the chiles and let cool until you can touch them.
  • Cut the chiles roughly along with the fresh red chiles.
  • Add the chopped chiles into the jar of your food processor or blender with the prepared spice mixture, chopped garlic, ginger, coconut oil, tamarind paste, vinegar, turmeric powder, grated palm sugar, and salt.
  • Blend well over high speed until you get a fine paste. Pause the machine during the blending process, open the lid of the jar, and scrape down the rims to incorporate everything well.
  • Add more oil to facilitate blending if the paste is too dry.
  • Scoop disown the content from the jar and use immediately if needed. Or else, you can put the vindaloo paste into a tight-fitting mason jar and store it for later use.
