This Tuscan Pork Marinade is a rustic, herb-rich Italian-inspired marinade that brings out deep, savory flavor in pork while keeping it tender and juicy. Extra virgin olive oil forms a smooth base that carries the aromatic blend of rosemary, sage, and thyme, while garlic adds bold intensity. Lemon juice and zest brighten the marinade with freshness, and Dijon mustard adds subtle tang and depth. Designed to reflect traditional Tuscan cooking style, this marinade works beautifully with pork chops, tenderloin, and grilled cuts, delivering a simple yet deeply flavorful result.

Ingredients

  • 1/3 cup Extra Virgin Olive Oil

  • 3–4 cloves Garlic (finely minced)

  • 1 tbsp Dried Rosemary

  • 1 tbsp Dried Sage

  • 1 tsp Dried Thyme

  • 1 tsp Sea Salt

  • 1/2 tsp Ground Black Pepper

  • 1 tbsp Lemon Juice

  • 1 tsp Dijon Mustard

  • 1 tbsp Fresh Lemon Zest

Directions

  • In a bowl, whisk together the extra virgin olive oil, lemon juice (or red wine vinegar), salt, and black pepper.
  • Stir in garlic, dried rosemary, dried sage, and dried thyme. Mix well so the herbs are fully coated in oil.
  • Add Dijon mustard and lemon zest (if using). Stir until fully combined..
  • Allow the marinade to rest for 15–20 minutes. This step is important because dried herbs need time to soften and release flavor into the oil

Notes

  • This recipe yields enough marinade for around 500–700g of pork, making it ideal for both quick weeknight meals and weekend grilling.
  • For best results, you can adjust lemon for more brightness, increase herbs for a stronger earthy profile, or add chili flakes for a light heat kick.
