Bright, peppery, and incredibly fresh, this Citrus Pepper Salmon Rub is designed to bring out the natural richness of salmon without overpowering it. Fresh lemon and orange zest give the blend a vibrant citrus aroma, while cracked black pepper, garlic, dill, and thyme create a savory, herb-forward finish with just the right amount of warmth. Unlike dry spice blends, the fresh zest lightly coats the seasoning, helping it cling beautifully to the salmon while adding a fresher, more aromatic flavor that feels light, balanced, and restaurant-worthy.

Ingredients

  • 1 tbsp Fresh Lemon Zest

  • 1 tbsp Fresh Orange Zest

  • 1 tbsp Cracked Black Pepper

  • 1 tsp White Pepper

  • 1 tbsp Garlic Powder

  • 1 tbsp Onion Powder

  • 1 tsp Smoked Paprika

  • 1 tsp Brown Sugar

  • ½ tsp Dried Thyme

  • ½ tsp Dried Dill

  • ¼ tsp Cayenne Pepper (Optional)

Directions

  • Add all the ingredients into a bowl.
  • Mix until the fresh zest coats the dry spices evenly.
  • Because fresh zest contains moisture, this rub is best used immediately rather than stored long-term. If needed, refrigerate for up to 2 days in an airtight container.

Notes

  • Pat the salmon dry and lightly brush with olive oil.
Rub the seasoning generously over the salmon fillets.
Let it marinate for 15–30 minutes before cooking.
  • This recipe yields about ⅓ cup of fresh rub, enough for roughly 500g–700g of salmon fillets, depending on how generously you season. Since fresh zest contains moisture, this rub is best used fresh for the brightest flavor and texture.
  • For adjustments, add more cayenne for heat or extra dill for a more herb-forward finish.
