Ingredients

  • 1/4 cup Fresh Lemon Juice

  • 1/2 xup Extra Virgin Olive Oil

  • 1–2 cloves Garlic

  • 1 tsp Dried Oregano

  • 1/2 tsp  Salt

  • 1/4 tsp Ground Black Pepper

  • 1 tsp Dijon Mustard (optional)

Directions

  • Add the lemon juice, Olive oil, garlic, oregano, salt, pepper, and Dijon mustard (if using) to a bowl or jar.
  • Whisk continuously until the sauce becomes slightly creamy and emulsified.
  • Taste and adjust seasoning as needed.
  • Let it rest for 10–15 minutes before serving for the best flavor.
  • Shake or whisk again if it separates.

Notes

  • This recipe yields about ¾ cup of sauce, making it perfect for multiple servings across salads, grilled meats, or roasted vegetables.
  • For adjustments, you can increase lemon juice for extra tang, add more olive oil for a milder finish, or include Dijon mustard for a creamier texture and deeper flavor.
  • A pinch of honey can also be added if you prefer a slightly softer, rounded taste profile.
