The Best Balsamic Herb Chicken Marinade Recipe

This Balsamic Herb Chicken Marinade is a flavorful, well-balanced blend designed to make chicken tender, juicy, and deeply aromatic. The tangy richness of balsamic vinegar pairs perfectly with olive oil, Dijon mustard, garlic, and a blend of classic herbs like oregano, basil, thyme, and rosemary. A touch of brown sugar softens the acidity, while paprika and black pepper add warmth and depth. Ideal for grilling, baking, or pan-searing, this marinade brings a restaurant-style finish to everyday chicken dishes with minimal effort.

  • 1/2 tsp Lemon Zest

  • 2 tbsp Onion (finely Grated)

  • 3 cloves Garlic (minced)

  • 1 1/2 tsp Dried Oregano

  • 1 1/2 tsp Dried Basil

  • 1/2 tsp Dried Thyme

  • 1/2 tsp Dried Rosemary (crushed)

  • 1/2 tsp Paprika

  • 1/2 tsp  Ground Black Pepper

  • 3/4 tsp Salt

  • 2 tsp Brown Sugar

Directions

  • Add the Balsamic Vinegar, Extra Virgin Olive Oil, Dijon Mustard, and Lemon Zest to a medium bowl.
  • Add the Finely Grated Onion and Minced Garlic, then whisk to combine.
  • Add the Dried Oregano, Dried Basil, Dried Thyme, Dried Rosemary, Paprika, Ground Black Pepper, Salt, and Brown Sugar.
  • Whisk until the marinade is well combined.

Notes

  • It yields about ½ cup of marinade, enough to coat approximately 500g to 700g (about 1 to 1½ lb) of chicken depending on how generously it’s used.
  • For variations, you can increase garlic for a stronger punch, adjust herbs based on preference, or add chili flakes for a hint of heat.
