Ingredients

  • 2 ½ tbsp Asian Red Chili Flakes

  • 1 tbsp White Sesame Seeds

  • 2 tbsp Shrimp Powder

  • 1 tsp Smoked Paprika

  • ½ tsp MSG (optional)

  • 1 tsp Soy Sauce

  • 1 tsp Rice Vinegar

  • 1 tbsp Toasted Sesame Oil

  • 1 tsp Sugar

  • ½ tsp Salt

  • 1 cup Neutral Oil

  • 5 cloves Garlic (finely chopped)

  • 2 tbsp Shallots (finely chopped)

  • 1 tbsp Fresh Ginger(finely chopped)

Directions

  • In a heatproof bowl, combine all the ingredients except the oil, garlic, ginger, and shallots.
  • Mix well and set aside.
  • In a saucepan, add oil and let it warm over low heat. Add the chopped garlic, shallots, and ginger. Heat on low for 10–12 minutes, stirring occasionally until the ingredients turn light golden and aromatic. Avoid burning to prevent bitterness.
  • Carefully pour the hot infused oil immediately (with aromatics) over the prepared chili mixture.
  • Stir well as it sizzles and releases aroma.
  • Let cool completely and transfer to a clean, airtight jar.
