Ingredients

  • 1 cup Ripe Mango (cut into small chunks)

  • 3–4 Habanero Peppers (stems and seeds removed, chopped)

  • 4 cloves Garlic (peeled, chopped)

  • ½ cup White Vinegar

  • ¼ cup Water

  • 3 tbsp Brown Sugar

  • 1 tsp Salt

  • ½ tsp  Ground Turmeric

  • ¼ tsp Ground Allspice

Directions

  • Add mango, habanero peppers, garlic, vinegar, water, sugar, and salt to a saucepan.
  • Bring to a gentle boil over medium heat.
  • Reduce the heat to low and simmer 15–20 minutes, stirring occasionally, until the mango is very soft and the flavors are blended. 
  • Carefully transfer the hot mixture to a blender and blend until completely smooth.
  • If the sauce is too thick, add 1–2 tbsp water and blend again. 
  • Return blended sauce to the saucepan.
  • Add ground turmeric and allspice.
  • Simmer on low heat for 3–5 minutes.
  • Taste and adjust salt, sugar, or vinegar as needed.
  • Remove from heat and allow the sauce to cool completely. 
  • Transfer to a clean glass bottle or jar.
  • Refrigerate before use.
