Ingredients

  • 2 tbsp Pure Maple Syrup

  • 1 1/2 tbsp Dijon Mustard

  • 1 tbsp Light Soy Sauce

  • 1 tbsp Olive Oil

  • 1 tbsp Fresh Lemon Juice

  • 1/2 tsp Red Chili Flakes

  • 1/4 tsp Ground Black Pepper

  • 1/4 tsp Salt

  • 1/2 tsp Smoked Paprika

  • 1/2 tsp Dried Thyme

  • clove Garlic (minced)

Directions

  • Add all the ingredients to a mixing bowl.
  • Use a whisk to mix everything until perfectly blended.
  • Use salmon as required, or store the unused marinade in a tight-fitting container and keep it in the refrigerator until needed.

Notes

  • Yields about ¾ cup, enough to marinate about 500 g of salmon fillets.
  • Adjust the flavor by adding more mustard for tang, extra maple syrup for sweetness, or a touch more chili for heat. Store unused marinade in an airtight container and refrigerate for up to 5 days.
  • Marinate: Coat about 500 g of salmon fillets evenly with the mixture. Cover and refrigerate for 20–30 minutes. Cook: Oven: Bake at 200°C (400°F) for 12–15 minutes, brushing with leftover marinade halfway. Pan-sear: Cook skin-side down first, then flip and glaze again for a caramelized finish. Finish: Let rest 5 minutes before serving to allow the glaze to set beautifully.
