Ingredients for the chicken marinade

  • 13 oz Chicken Thigh (Boneless)

  • 1 tsp Salt

  • 1 tsp Ground Black Pepper

  • 1 tsp Paprika

  • 1 tsp Soy Sauce

  • 1 Egg White

  • 2 tsp Vegetable Oil

  • 4 tbsp Cornstarch

  • Ingredients to fry the chicken
  • ⁠Enough Vegetable Oil to fry the chicken

  • Ingredients to prepare the sauce
  • 4 tbsp Tomato Puree

  • 2 tbsp Chili Sauce

  • 1 tbsp Ketchup

  • 1 tbsp Dark Soy Sauce

  • 1 tbsp Brown Sugar

  • 1 tbsp Cornstarch

  • 6 tbsp Water

  • Ingredients to make Hot Garlic Chicken
  • 10 cloves Garlic (Finely chopped)

  • 1 ½ tsp Fresh Ginger (Finely chopped)

  • 2 nos Green Chiles (Cut into pieces)

  • 3 nos Dried Red Chiles (Cut into pieces)

  • 2-3 tbsp Spring Onions (White part, roughly chopped)

Directions

  • In a large mixing bowl, combine the chicken with the ingredients required for the marinade and set aside for about 30 minutes.
  • ⁠Heat vegetable oil in a pan and fry the marinated chicken pieces over medium heat until cooked and golden brown.
  • ⁠In a separate bowl, combine the ingredients required for the sauce. Mix well and set aside.
  • Add oil, garlic, ginger, green chiles, red chiles, and spring onions in another saucepan. Saute for about 2 minutes.
  • Add the prepared sauce mixture and cook over low heat until the sauce thickens.
  • ⁠Add the fried chicken pieces and combine with the sauce until every chicken piece is well-coated in the sauce.
  • ⁠Garnish with the green part of the spring onions and serve as preferred!
