  • 2 tbsp Oil

  • ½ Red Onion (Finely chopped)

  • 1 Red Chile Pepper (Finely chopped)

  • 1 tsp Ginger (Grated)

  • 2 large Tomatoes (Ripened, finely chopped)

  • 2 tbsp Apple Cider Vinegar

  • 4 tbsp Raw Sugar

  • 1 tsp Salt

  • 1 tsp Mild Curry Powder

  • ¾ tsp Ground Cumin

  • ¾ tsp Ground Cinnamon

  • ½ tsp Dried Oregano (Optional)

Directions

  • Heat a saucepan over medium heat and add the oil. Once hot, add the chopped onion, red chile pepper, and grated ginger. Sauté for a few seconds until fragrant.
  • Add the chopped tomatoes and stir with a wooden spatula. Let them cook for about a minute until they begin to soften.
  • Add apple cider vinegar, raw sugar, salt, curry powder, ground cumin, and ground cinnamon. Stir well to combine.
  • Reduce the heat to low and allow the mixture to simmer until it thickens and reduces in volume, stirring occasionally.
  • Sprinkle in the dried oregano (if using), mix well, and let it cook for another 20 seconds. Then, turn off the heat.
  • Let the relish cool before serving. Enjoy as desired!
