Ingredients

  • 2 tbsp Coriander Seeds

  • 1 tbsp Cumin Seeds

  • 1 tbsp Fenugreek Seeds

  • 1 tbsp Brown Mustard Seeds

  • 1 tbsp Fennel Seeds

  • ½ tbsp Black Peppercorns

  • ½ tbsp Green Cardamom Pods

  • 4 nos Dried Red Chiles

  • 2 Dried Bay Leaves

  • 1 piece Cinnamon (About 1 ½-inch piece)

  • 1 ½ tbsp Ground Turmeric

Directions

  • In a preheated pan, dry toast coriander, cumin, fenugreek, brown mustard seeds, fennel, black peppercorns, and green cardamom pods over low heat for 2 minutes. Set aside.
  • In the same pan, dry toast the dried red chiles, bay leaves, and cinnamon over low heat for another 1 minute. Set aside.
  • Let the toasted spics cool; down for a while.
  • Transfer them to the grinder jar and add ground turmeric.
  • Grind well to get a fine powder.
  • Use as desired or store the spice blend in a tight-fitting glass spice jar.
