Ingredients
¼ cup Extra Virgin Olive Oil
2 tbsp Fresh Lime Juice
¼ cup Fresh Cilantro Leaves (lightly packed)
1 clove Garlic
1 tbsp Honey
¼ tsp Ground Cumin
¼ tsp Fine Sea Salt
⅛ tsp Freshly Ground Black Pepper
1–2 tbsp Water (optional, to adjust consistency)
Directions
- Add the olive oil, lime juice, cilantro, garlic, honey, cumin, salt, and black pepper to a blender or small food processor.
- Blend on high until the cilantro is finely pureed and the vinaigrette is smooth and emulsified, about 30–60 seconds.
- If you prefer a thinner dressing, blend in 1–2 tablespoons of water until you reach your desired consistency.
- Taste and adjust the seasoning, adding a little more lime juice for extra brightness, honey for sweetness, or salt to enhance the flavors.
- Transfer to a clean glass jar or airtight container and refrigerate for at least 15 minutes before serving to allow the flavors to meld.
