Ingredients

  • 1 tbsp  Oil (Neutral oil of choice)

  • 1  Small Onion (chopped)

  • 2 cloves Garlic (chopped)

  • 1 Carrot (grated)

  • 4 Fresh Habanero Peppers (chopped, seeded)

  • ½ cup White Vinegar

  • ¼ cup Fresh Pineapple Juice

  • ½ tsp Salt

  • ½ tsp Honey

  • ¼ tsp Smoked Paprika

  • ¼ cup Water

Directions

  • Heat oil in a pan over medium heat.
  • Add chopped onion, garlic, and carrot. Sauté over medium heat until soft and fragrant for about 4–5 minutes.
  • Add chopped habaneros, vinegar, pineapple juice, salt, sugar, smoked paprika, and water. Simmer over medium-low heat for 10 minutes, until everything softens and flavors meld.
  • Let cool slightly, then blend until very smooth. Adjust with more water or pineapple juice if needed.
  • Strain the blended sauce over a fine mesh sieve and transfer to a clean, airtight bottle or jar. Refrigerate and let it sit overnight, as it gets better as it rests.
