Simple And Authentic Homemade Spicy Tikka Masala Blend!

Spices

  • 3 tbsp 3 Cumin seeds

  • 3 tbsp 3 Coriander seeds

  • 4-5 4-5 Black cardamom

  • 5-6 5-6 Green cardamom

  • 2 tsp 2 Black peppercorns

  • 5-6 5-6 Cloves

  • 1 piece 1 Cinnamon (about a 2-inch piece)

  • 15-18 15-18 Kashmiri Red chiles (dried)

  • 1 tsp 1 Red chile powder

  • 1/2 tsp 1/2 Ground turmeric

  • 1/2 tsp 1/2 Ground nutmeg

  • Other ingredients
  • 1-2 tbsp 1-2 Dry Mango powder

  • Equipment
  • 1 1 Saucepan (large)

  • 1 1 Wooden Spatula

  • 1 1 Plate

  • 1 1 Spice grinder/ Food processor

  • 1 1 Kitchen towel/ paper towel

  • 1 1 Fine mesh sieve

  • 1 1 Air-tight container

Directions

  • Keep the saucepan over medium heat and add the whole spices to it (cumin, coriander, black cardamom, green cardamom, cloves, cinnamon, dried red chiles, and black peppercorns).
  • Dry-roast these spices for about 8-10 minutes until they turn fragrant and slightly change color. Keep stirring the spices while they are roasting to avoid them burning.
  • Once all the spices are roasted to the right point, remove them from the pan and transfer them to a large plate to cool down.
  • Now, wipe the jar of your spice grinder or food processor using a clean kitchen towel or a paper towel.
  • Add the roasted spices, ground nutmeg, dry mango powder, ground turmeric, and red chile powder. You can work in batches if you have a small grinder jar.
  • Grind everything together until well incorporated, and you get a fine, smooth powder.
  • Run the tikka spice blend through a fine mesh sieve to eliminate any large lumps.
  • Re-grind the lumps and mix them with the tikka masala blend.
  • Use it immediately with your dishes, or store it in a well-fitting glass container until you need it.
