A smoky, spicy-sweet marinade made with chipotle powder, tomato purée, garlic, lime juice, and warm spices. Yields ¾ cup, enough for 1.5–2 lbs turkey cuts or a 5–6 lb whole bird. Marinate for 4–24 hours, then roast, grill, or bake as desired.

Ingredients

  • 2 tbsp Chipotle Pepper Powder

  • 3 tbsp Tomato Purée

  • 2 tbsp Melted Butter

  • 1 tbsp Fresh Lime Juice

  • 3 cloves  Garlic (finely minced)  

  • 1 tbsp Honey

  • 1 tsp  Smoked Paprika

  • ½ tsp Ground Cumin

  • ½ tsp  Ground Coriander

  • ½ tsp Ground Black Pepper

  • ¼ tsp Ground Allspice

  • 1 tsp Salt

Directions

  • Add all ingredients to a large mixing bowl.
  • Whisk everything together until perfectly blended. 
  • This marinade should be thick but spreadable.
  • Use as required!

Notes

  • Yielding approximately ¾ cup, it’s ideal for 1.5 to 2 lbs of turkey cuts or a whole turkey around 5–6 lbs.
  • Use it for turkey breasts, thighs, or a small bird, just rub generously under the skin and over the surface. For turkey cuts, marinate for 4–6 hours; for a whole bird, 12–24 hours is best.
  •  Adjust the heat level with more chipotle powder or mellow it with extra honey. You can also baste with the pan juices or a reserved (non-contaminated) portion of the marinade midway through roasting.
  • Leftover marinade (if unused with raw meat) can be refrigerated for up to 1 week.
