Ingredients

  • 2 tbsp Red Chile Powder (preferably Thai red chile powder)

  • 1 tbsp Smoked Paprika

  • 1 tbsp Ground Coriander

  • 2 tsp Ground Cumin

  • 2 tsp Ground Ginger

  • 2 tsp Garlic Powder

  • 2 tsp  Onion Powder

  • 2 tsp  Lemongrass Powder

  • 1 tsp Ground White Pepper

  • tsp  Salt

  • ½ tsp Ground Turmeric (optional)

  • ½ tsp Finely Grated Dried Lime Zest

  • ¼ tsp Bay Leaf Powder

Directions

  • Combine all the ingredients in a mixing bowl or a plate.
  • Mix well until everything is perfectly blended.
  • Use as needed or store the seasoning in an air-tight, clean glass spice contain

Notes

  • Use it as a dry rub by sprinkling 1–2 teaspoons per pound on chicken, pork, tofu, or vegetables before cooking. To make a quick curry sauce, bloom 1 tablespoon of the mix in a tablespoon of oil, then add ½ to 1 cup of coconut milk and simmer for a flavorful Thai red curry. It also works beautifully as a flavor booster in soups, stir-fries, or marinades.
  • Store the seasoning in an airtight container in a cool, dry place away from sunlight to maintain its bold character. For optimal aroma and potency, use within 6 months.
