Ingredients for the cornstarch slurry
2 tbsp Cornstarch
2 ½ tbsp Water
- Ingredients for the sauce
1 cup Fresh Pineapple Juice
1 cup Water
4 tbsp Rice Vinegar
¼ cup Brown Sugar
1 tbsp Bird’s Eye Chiles (Seeded, chopped)
½ cup Fresh Pineapple (Chopped)
1 tsp Salt
½ tsp Sweet Paprika
Directions
- Mix the cornstarch with water and set it aside.
- Combine all the ingredients (except sweet paprika) in a saucepan.
- Whisk well to incorporate everything.
- Place the saucepan over medium heat and cook, stirring with a spatula to dissolve the sugar.
- After simmering for about a minute, add the paprika and mix well.
- Bring the sauce to a gentle simmer.
- Add the prepared cornstarch slurry and mix thoroughly.
- Reduce the heat to medium-low and let the sauce thicken, cooking for about 4-5 more minutes.
- Once the sauce reaches your desired consistency, remove the pan from the heat and let it cool, gently smashing the pineapple pieces with the spatula.
- Once cooled, place a fine mesh strainer over a separate bowl and run the sauce through it.
- Smash the chile and pineapple pieces to extract all the sauce.
- Once the sauce is completely cooled, transfer it to a sterilized glass jar and store it in the refrigerator.
- Enjoy as desired!
