Ingredients for the cornstarch slurry

  • 2 tbsp Cornstarch

  • 2 ½ tbsp Water

  • Ingredients for the sauce
  • 1 cup Fresh Pineapple Juice

  • 1 cup Water

  • 4 tbsp Rice Vinegar

  • ¼ cup Brown Sugar

  • 1 tbsp Bird’s Eye Chiles (Seeded, chopped)

  • ½ cup Fresh Pineapple (Chopped)

  • 1 tsp Salt

  • ½ tsp Sweet Paprika

Directions

  • Mix the cornstarch with water and set it aside.
  • Combine all the ingredients (except sweet paprika) in a saucepan.
  • Whisk well to incorporate everything.
  • Place the saucepan over medium heat and cook, stirring with a spatula to dissolve the sugar.
  • After simmering for about a minute, add the paprika and mix well.
  • Bring the sauce to a gentle simmer.
  • Add the prepared cornstarch slurry and mix thoroughly.
  • Reduce the heat to medium-low and let the sauce thicken, cooking for about 4-5 more minutes.
  • Once the sauce reaches your desired consistency, remove the pan from the heat and let it cool, gently smashing the pineapple pieces with the spatula.
  • Once cooled, place a fine mesh strainer over a separate bowl and run the sauce through it.
  • Smash the chile and pineapple pieces to extract all the sauce.
  • Once the sauce is completely cooled, transfer it to a sterilized glass jar and store it in the refrigerator.
  • Enjoy as desired!
