Ingredients

  • 4 tbsp Olive Oil

  • 3 tbsp Lemon Juice (Freshly Squeezed)

  • 1 tbsp Red Wine Vinegar

  • 4 cloves Garlic (Finely Minced)

  • 2 tsp Dried Oregano

  • 1/2 tsp Dried Thyme

  • 1 tsp Fresh Lemon Zest

  • 1 1/2 tsp Salt

  • 1 tsp Ground Black Pepper

  • 1 tsp Paprika (Optional)

Directions

  • In a bowl, add olive oil, lemon juice, and red wine vinegar. Whisk until slightly combined and smooth.
  • Stir in garlic, oregano, thyme, lemon zest, salt, black pepper, and paprika.
  • Whisk again until well combined and use as desired.

Notes

  • This recipe yields about ¾ cup of marinade, enough to coat approximately 700g to 900g (around 1.5 to 2 lb) of pork, depending on how generously it’s applied.
  • For variations, you can increase garlic for a stronger punch, adjust lemon for extra brightness, or add chili flakes for a subtle heat boost.
  • Marinate pork for at least 4 hours or overnight for deeper flavor absorption. For best results, always bring the meat closer to room temperature before cooking for even browning. This marinade also works beautifully with chicken or vegetables if you want to repurpose it beyond pork.
