Ingredients

  • 2 tbsp Coriander Seeds

  • 2 tbsp Cumin Seeds

  • 2 tbsp  Fennel Seeds

  • 2 tbsp Fenugreek Seeds

  • 1-2  Dried Red Chiles

  • 1 piece Cinnamon Stick (about 1 inch)

  • 1 Star Anise

Directions

  • Add the coriander, cumin, fennel, fenugreek, dried chiles, cinnamon, and star anise in a dry skillet over medium heat. 
  • Stir constantly for about 2–3 minutes or until fragrant and lightly browned. Be careful not to burn them.
  • Transfer the roasted spices to a plate and allow them to cool fully.
  • Once cooled, add the spices into the grinder jar, and grind on high speed until you get a fine powder.
  • Use as desired or store in an air-tight glass spice container.

Notes

  • This spice mix works beautifully as a marinade base, dry rub, or flavor booster for curries, rice dishes, grilled meats, and roasted veggies.
  • Before or after grinding the toasted spices, add ground turmeric to this spice blend if you prefer more color and earthiness.
  •  Want it spicier? Toss in an extra chili or two. Prefer it milder? Remove the seeds.
  • This spice mix stores well in an airtight container for up to 3–4 months in a cool, dark place, making it a handy pantry staple to elevate your everyday cooking.
