Ingredients

  • 3 tbsp Brown Sugar

  • 1 tbsp Plain Ground Coffee

  • 2 tbsp Paprika

  • 2 tsp Creole Mustard Powder

  • 2 tsp Onion Powder

  • 2 tsp Garlic Powder

  • 1 tsp Ground Coriander

  • 1/2 tsp Ground Cumin

  • 1 tsp Dried Thyme

  • 2 tsp Dried Basil

  • 1 tbsp Ground Bay Leaves

  • 1 tsp Ground Black Pepper

  • 1 tsp Ground White Pepper

  • 1 tsp Ground White Pepper

  • 2 tbsp Salt

Directions

  • Combine all the ingredients in a mixing bowl or a plate.
  • Mix until everything is well-blended
  • Use as desired or store in a well-fitting glass spice container.

Notes

  • Use 1 tablespoon per pound, rubbing it in at least 30 minutes before cooking or overnight for a deeper flavor.
  • Adjust by reducing cayenne for less heat, adding smoked paprika for richness, or incorporating cinnamon or cocoa for extra depth.
  • Store in an airtight glass container in a cool, dry place for up to 6 months.
  • Mix 2 tablespoons of the dry rub with 1–2 tablespoons of olive oil (or melted butter for a richer finish) to create a paste. For extra depth, add a splash of Worcestershire sauce or soy sauce. This allows the seasoning to coat the meat evenly, locking in moisture and enhancing flavor as it cooks.
