Ingredients to marinate the chicken:

  • 12 Chicken Wings (Drumlets included, skin-on)

  • 1 ½ tsp Salt

  • 1 ½ tsp Ground White Pepper

  • 1 tsp Garlic Powder

  • 1 tbsp Light Soy Sauce

  • 1 tsp Cayenne Pepper

  • Ingredients for the sauce:
  • 2 tbsp Tomato Ketchup

  • 1 tbsp Chili Sauce

  • 1 tbsp Dark Soy Sauce

  • 2 tbsp Honey

  • 1 tsp Oyster Sauce

  • 3-4 tbsp Water

  • Ingredients for deep-frying chicken:
  • 1 cup Oil

  • Ingredients to complete the dish:
  • 1 tbsp Oil

  • 3 cloves Garlic (Chopped)

  • 1 tsp  Fresh Ginger (Grated)

  • 2 tbsp Scallions (Chopped)

  • 1 tsp Red Chili Flakes

Directions

  • In a large mixing bowl, combine the salt, ground white pepper, garlic powder, soy sauce, and cayenne pepper. Add the chicken wings, mix well, and set aside to marinate for at least 20 minutes.
  • In another bowl, combine tomato ketchup, chili sauce, dark soy sauce, honey, oyster sauce, and water. Whisk until smooth and set aside.
  • Heat 1 cup of oil in a pan over medium-high heat. Once hot, carefully add the marinated chicken wings and fry until golden brown. Drain and set the fried chicken aside on a separate plate.
  • In another pan, heat 1 tbsp of oil over medium heat. Add the chopped garlic and grated ginger, sautéing until fragrant.
  • Add the chopped scallions and sauté for a few seconds. Season with 1 tsp of red chili flakes and mix well.
  • Pour in the prepared sauce and reduce the heat to medium-low. Let it simmer for about a minute.
  • Gently add the fried chicken wings to the pan, mixing well until the wings are coated in the sauce.
  • Increase the heat to medium-high and let the chicken cook in the sauce for an additional 2 minutes.
