Notes

  • Whisk the cornstarch first: Make sure the cornstarch is completely dissolved before heating to prevent lumps and ensure a smooth, glossy sauce.
  • Cook just until thickened: The sauce should lightly coat the back of a spoon. Avoid overcooking, as it will continue to thicken slightly as it cools.
  • Toss immediately: For crispy Beijing Beef, coat the freshly fried beef while the sauce is hot. This gives you the best balance between a glossy coating and crispy texture.
  • Adjust the balance: Add a little more rice vinegar for extra tang, brown sugar for more sweetness, or red pepper flakes for additional heat.
  • Keep it glossy: Sesame oil is best added before cooking, as directed, so its nutty aroma becomes part of the sauce without overpowering the other flavors.
  • Versatile beyond beef: Use this sauce with crispy chicken, shrimp, tofu, stir-fried vegetables, or as a dipping sauce.
  • Storage: Cool completely and refrigerate in an airtight container. Use within 4–5 days for the best quality. Reheat gently and add a small splash of water if the sauce becomes too thick.
