Fish

So, we will show you how to make this soup with the things you can find in your area. So, here’s our version of Assam laksa that is as good as any of those you get to enjoy in Malaysia!

Ingredients

  • Ingredients for the broth:
  • 9 oz 9 Mackerel – You can also take sardine (250g)

  • 10 cups 10 Water

  • Vietnamese coriander – You can also take regular cilantro – (A small bunch)

  • 3 oz 3 Tamarind paste (80g)

  • Salt (to taste)

  • Brown sugar (to taste)

  • Ingredients for the topping:
  • Sweet Shrimp paste

  • Onions (Sliced)

  • Fresh Red chilies (Chopped)

  • Pineapple (Chopped)

  • Cucumber (cut into julienne)

  • Lettuce (Chopped)

  • 2 2 Limes (halved) – small

  • Other ingredients:
  • ¼ cup ¼ Assam laksa curry paste (You can either buy this from the store or make your own paste at home- click on this link to get an easy homemade Assam laksa curry paste recipe)

  • 9 oz 9 Laksa noodles dry – You can also take regular rice noodles or vermicelli (250g)

  • Equipment:
  • Saucepans

  • Bowls/ Plates

  • Spoons

  • 4 4 Serving bowls

Directions

  • Preparation:
  • Cook the noodles according to the instructions given in the packet, rinse them with cold water, drain them, and leave them in the refrigerator until they are ready to be served.
  • Next, clean the fish thoroughly. If you are not very comfortable with the smell of the fish, you can rinse them with lemon water in the final wash.
  • To make the broth:
  • Pour the water into a saucepan along with the cleaned fish and cook them on low heat for about 10 minutes (lid opened).
  • After the fish is cooked, take them out, place them on a plate to cool down, and strain the water. Discard any impurities.
  • Once the fish is cool enough to touch, flake them, removing the skin and separating the fish meat from the head and bones. Save the heads and bones to be used later. Set the flaked fish aside.
  • Divide the flaked fish into two bowls. Lightly mash one portion of the fish flakes using a fork and keep the other portion aside.
  • Then, keep the strained water back on the stove, and set the flame high. Add the reserved fish heads and bones along with the curry paste, tamarind paste, and a bunch of Vietnamese coriander.
  • Stir well, bring this to a boil, then reduce the heat to low and simmer for another 30 minutes (lid closed).
  • After 30 minutes, remove the saucepan from the heat, and strain the broth, discarding the solids.
  • Season the broth with salt and sugar according to taste. Add the mashed flaked fish and stir well to combine.
  • Serving:
  • Take out the noodles from the refrigerator 10 minutes before serving and let them come to room temperature. Then portion them into the 4 serving bowls.
  • Pour the prepared Assam laksa broth into the serving bowls as desired and top them with cucumber, lettuce, reserved flaked fish, pineapple, chopped chilies, and sliced onions, along with a teaspoon of sweet shrimp paste and a half of a lime wedge for each bowl.
  • Enjoy warm!

  • Try to incorporate Asam keping and Bunga kantan if you have any chance of getting them. You can add Asam keping along with the tamarind paste when you simmer the broth, chop the Bunga kantan and add it as a topping to your Assam laksa.
  • You can also take canned mackerel if you can’t find fresh fish. If so, you wouldn’t have to deal with the heads and bones of the fish. Just cook them with water, take them out, flake, and put half of them back into the broth, saving some for the topping.
  • Even though we have used lime wedges here, if you can find calamansi, go ahead and use it for a more authentic touch!
